Faithfully Feeding Family, Week Three Handout: Butternut Squash Soup

I have never been a big fan of squash, but I found this recipe a year or two ago and I absolutely love it.  It’s filling, yummy, and good for me. 

We also made a dessert that was mostly healthy.  Sweet, but full of healthy ingredients as well.  I have been trying to keep my healthy foods non-dairy when possible.  Both of these recipes reflect that.

The dessert is a chocolate mousse that is made with Avocado.  The key to making this dessert tasty, and not too “green” is to ensure the avocado is very ripe.  Not brown ripe of course, but perfectly soft ripe.  When I tried it the first time, the avocado was a little too green and my take on the final product was: “chocolate salad”.  That’s not what we want.  When we made it again, in life group, we were working with avocado in a better condition and it was really good.  I love the texture of this dessert and I’m going to be trying it on the boys soon.  My avocado’s are ripening now!
