Week 1: August 9, 2018

Recipe: Simple Quesadillas

Ingredients:

  • Tortillas
  • Cheese (any kind you prefer, as long as it keeps the other ingredients inside the tortilla)
  • Cooked Meat, Sautéed Vegetables, or Sliced Fruit
  • Dipping sauce (like salsa)

I left the ingredients vague here because quesadillas can be ANYTHING heated into a folded tortilla.  I typically do quesadillas like a short order cook, lay out the tortilla and then put the ingredients in as each family member tells me what they want.  Some days all I have only two options, with meat or without.  Some days I’ll have several as well as dessert quesadilla options.

Instructions:

Place precooked filling of cheese and meats or veggies into open tortilla.  Arrange the filling to fill mostly one half so that it’s easier to fold the tortilla over.  Also keep in mind that the quesadilla holds up best if there is cheese on both sides of the meat or vegetable, so if all the cheese is on the bottom, sprinkle a little on top to glue it all together.

Heat your skillet or griddle to medium or medium-high.  Place folded tortilla directly on hot skillet (I do not usually use oil or butter because I don’t like greasy quesadillas, but you can if you want) and cook for approx. one minute.  I usually look for the cheese to be melted just enough to bond the bottom portion of the filling to the tortilla.  Carefully turn the quesadilla over and cook the other side for at least 30 seconds.  Look for raw cheese and if you see any, keep cooking.  If the top of the tortilla is getting brown but your cheese is still raw, the burner is too high.  You could try turning it down and placing a lid on your skillet to trap heat and allow the inside of the quesadilla to cook more evenly.

Place the quesadilla on a plate and cut with a pizza cutter into desired number of wedges and serve with a dipping sauce like salsa, sour cream, or guacamole.

For a dessert quesadilla, consider cream cheese, and sliced strawberries, heated the same way in your skillet.  (We made these Thursday night with a swirl of *lime icing on top after cooking, like you would ice a toaster strudel.)  The sweet and savory options can be endless.  Get creative and get the kids involved.

*Lime icing: juice from one lime, mix in powdered sugar until desired consistency is reached.

Conversations:

Use these conversation starters around the table at dinner.  Cut the paper into strips with one question on each strip, and place in a bowl, mug, or jelly jar, then have family members draw them out in turn.
