Mmmm Sweet Potato Biscuits

I got up and made sweet potato biscuits this morning. I just love these things but rarely take the time to make them. I decided to prepare yesterday and boiled and mashed my sweet potato while I was making dinner. It was so worth it!


Sweet Potato Biscuits

INGREDIENTS
• 1 cup all-purpose flour
• 3 teaspoons baking powder
• 2 teaspoons white sugar
• 1 teaspoon salt
• 2 tablespoons shortening
• 3/4 cup mashed sweet potatoes
• 1/4 cup milk
DIRECTIONS
1. Preheat the oven to 400 degrees F (200 degrees C).
2. In a medium bowl, stir together the flour, baking powder, sugar and salt. Cut in the shortening until pieces of shortening are pea-sized or smaller. Mix in the sweet potatoes, and enough of the milk to make a soft dough.
3. Turn dough out onto a floured surface, and roll or pat out to 1/2 inch thickness. Cut into circles using a biscuit cutter or a drinking glass. Place biscuits 1 inch apart onto a greased baking sheet.
4. Bake for 12 to 15 minutes in the preheated oven, or until golden brown.
FOOTNOTE
• Either canned mashed sweet potatoes, or leftover sweet potatoes can be used in this recipe. I make my mashed sweet potatoes using a little brown sugar and cinnamon, which lends a little spice to the biscuits.

I didn’t use left-over sweet potatoes so when I mashed them up I added a healthy sprinkle of cinnamon and a little bit of orange juice, no extra sugar.

I made a double batch which totaled 19 biscuits but the amount is relative to the size of biscuit cutter you use. I used a juice cup. I froze 10 of them which of course means we devoured nine this morning. The boys and I each ate two and I let Owen put the last one in his lunch box for later. Poor Kris got up too late to get any.

Once baked, they are really good with ham but I think I like them simply with butter the best. I keep thinking they would taste just heavenly with blackberries so I’m going to try that one of these days.

Anyway…I thought you might enjoy these too. There are plenty of other recipes if you google “sweet potato biscuits.” This is the one I like the best so far…though I haven’t tried all of them…yet.
