Good

Yesterday was goodness all funneled onto a calendar with a handwritten star in red sharpie on top. First, I got a little boy off to school with all his clothes on and all his papers in his folder. Then I got a huge basketful of groceries which included a couples portion of Kroger’s Two-Bite Brownies. Now…I had passed the bakery earlier and averted my eyes from the regular size bag of Two-Bite Brownies without any trouble at all, but when I happened upon this adorable little package with only four little brownies for 99 cents…well, I just couldn’t resist.

If you’ve never had these brownies…well…they aren’t really anything special as brownies go…they taste good but I’ve had much better. I think what always makes me want them is the fact that they are round. They are individually baked in mini-muffin cups and that makes my favorite part of a brownie, the outside crunchy part, the largest part of the brownie. So…mediocre brownies have become temptations for me. But for 99 cents…c’mon…who can blame me for grabbing a little bag on my way to check out?

We got all of our goods home and the cold stuff put away and then I put a small little boy to bed and a medium sized little boy was happy to have his toys all to himself. He played, and played and played.

I went outside to spend some time with God…and wouldn’t you know it…He showed up and didn’t even make fun of me for being late. He was so happy to be with me and I with Him. I had a great morning.

To top that off I came in after a bit and as I worked on some graphics, I heard Ivan calling me. I don’t handle interruptions very well…it throws me WAY off so it took me a little while to respond. Finally I realized he was just calling me to tell me that he loved me. How sweet is that? “mommy, I wove you.” That’s it. No request for anything…just a little reminder that my sweet Ivan is thinking of me and likes the way it feels. I made sure to spend some me and him time with Ivan after I was done. I made a Lego building…and he made a Lego airplane.

I picked up Owen and on the way home we noticed that there were people in the neighborhood pool. Now…the day was nice but I didn’t expect to see people swimming. The boys were anxious to go too, so after lunch we prepared ourselves and went to the pool. I enjoyed it. The sun was warm but not menacing, the water was cold but not freezing and the boys were active but not unmanageable. I need to get a few more pool accessories before we’re completely water ready, but we are close. I also need to get myself something to wear in there. I have a suit but of course it’s a little older and I’d like to have an alternate as well. I can see us spending quite a bit of time down there.

The boys napped for an hour and then it was dinner time. I decided to let my mind wander a bit but stuck to the menu. Tuesday night is soup night and I had purchased potatoes for the occasion. I felt like the mushed up version I usually make was just too hot sounding so I did something different.

I washed and sliced (w/skin on) six red potatoes about a 1/4 inch thick. I laid them out on a cookie sheet and drizzled them with olive oil, sprinkled them with salt and pepper and some Thyme leaves. Then I roasted them at 400 degrees for about 30 minutes total (turning once). While they were roasting I fried up a half pound of ground sausage and let it drain. I pulled out my last pint of frozen chicken stock and melted it in a saucepan. Once the elements were warmed and ready I combined the sausage, a little over half of the potatoes, and the chicken stock with about two cups of raw cream from my dairy farm in KY. I didn’t have to add much flavor after that, just a tiny bit of smoke house flavoring and some grated white cheddar cheese melted in to the whole batch. It was good. I had some rolls to go with it and I enjoyed it very much.

I refrigerated the remaining roasted potato and this morning I made hash-browns, sausage and scrambled eggs w/cheddar cheese for breakfast.

Good, good, good stuff.

I can hear Aron upstairs saying…”happy…know!” and then clapping once. He’s singing “If You’re Happy and You Know It.”

  1. Oh, I like those two bite brownies. I haven’t had them since I was pregnant with Chloe so that probably explains why I’m thinking they’re so good 🙂

    It sounds like you had a completely perfect day. Don’t you just love those?

  3. I am stealing that recipe this weekend! I bought a pound of some Publix Italian sausage yesterday that is absolutely delicious. They had samples of it and it was so good I couldn’t resist getting some for myself. I am going to use that I think. And maybe some kale! Thanks for the inspiration!

  4. What a sweet little Ivan. The soup sounds delicious! Have you had Zupa Toscana at Olive Garden? Yours sounds similar. It’s one of two of my favorite soups. Both have sausage. I wish I didn’t like that stuff so much. My favorite part of the day was time with God. Isn’t it great how He much He loves to spend time with us and is faithful to show up?
