We have an odd week this week as the boys are only going to school for three half days. For that reason, I’m trying to plan dinners that are easy, not necessarily quick, but easy and fun to eat.
Monday – Cheesy Potatoes
We’ll layer potatoes with cheese and other fun things in a casserole dish, top it with some homemade bread crumbs and serve it with some veggies and fruit.
Tuesday – Smoothies
We’ll blend up some fruit and mix ins and serve it up with some roasted sweet potato wedges.
Wednesday – Grilled Cheese Sandwiches
Standard church night meal.
Thursday – Chicken Nuggets
Hand breaded and fried in coconut oil…easy and pleasey…served with honey and carrot sticks.
Friday – Pizza
I finally got my food processor I ordered for my birthday (in March), I’m going to try to make pizza dough in it.
Saturday – Left-Overs
Surely there will be something to eat.
Sunday – Salad Bar
I will have to do a lot of prep (and some shopping) on Friday or Saturday, but I’ll set this up for our life group at church on Sunday. I think they’ll really enjoy it.
I saw a recipe for chick-fil-a chicken nuggets on Pinterest and thought they might be good fried in coconut oil. I’m going to have to try that. Unfortunately I don’t usually focus on fun in food. I do in other areas but never think of it for food. I probably should.
