How I Cook

Tell me I’m not the only one who does this.

Taco Soup Recipe for Tonight and Tonight Only:

  • 1/2 can of tomato juice
  • 1/2 can of Rotel (the other half is already mixed in the left-over black beans)
  • Undetermined amount of left-over black beans with Rotel
  • Approximately one pound of left-over taco seasoned, browned, ground beef
  • 1/2 bag of frozen corn
  • Some chicken stock that was saved from some chicken I had pan seared earlier
  • The last bit of salsa from the jar
  • Salt to taste

I’ll be making some corn bread muffins to go with it, and we have sour cream and cheese to garnish.   This is why I can’t repeat recipes…if you can call that a recipe.

Every evening is an adventure!

  1. Yes! We are having something similar for dinner! I haven’t decided what to throw in the pot yet! lol There will be chicken, black beans, tomato sauce, taco packet, and maybe some rice….

  3. My co-workers frequently comment on my left-overs that I have for lunch. Of course they want the recipe and it reads similar to yours. You know they demand that I write it down, and then never attempt to recreate that. I think I should just start saying it’s a secret family recipe to save the writing down 🙂 Looks yummy by the way!

  4. I do that too, but I do try to write things down so that I can at least make it again to an extent. I love taco soup. Add some strips of tortillas. I do that with corn and I have done it with flour and I prefer corn tortillas that way. Yum!

  5. Sounds yummy 🙂 We seldom have leftovers, so…doing something with them is seldom an option, but my Mom always cooked like that!

  6. Taco Soup is Madison’s FAVORITE!!! I’ll make a pot and she’ll eat it for lunch and dinner ALL WEEK LONG!!! Since I know what you’re having for dinner now, expect an 11 year old on your door step around 6ish 🙂 Oh yeah . . . what’s for dessert? She loves cookies & cream ice cream! Homemade you said? You’re a doll . . . that’s even better. Just keep her for the night in that case 🙂

  7. Amber – Well, at least you know very well that I’ll take her. Partly due, but not limited to, the fact that my boys love her and didn’t get to see her at your house the other night. However…the soup was last night. Tonight it’s pork chops.

  8. I have a specific taco soup recipe but I do this ALL the time. Leftovers in the pot make for some good soups and casseroles.
