This isn’t necessarily a holiday recipe but I thought it was worth sharing.
When I was a kid my mom decided to have another baby and she named him Joel. This baby grew to the point that he wanted to eat solid foods but wasn’t exactly able to handle eggs and toast for breakfast. My mom, being the resourceful sort came up with a way for him to eat eggs and toast by chopping everything up in a bowl and handing him a little spoon to eat it. To those of us who were eating plain eggs and toast on a plate it looked rather tasty so we began asking for “Egg Like Joel’s” which stuck as the name for this little dish. Yesterday morning while trying to come up with something for Ivan and Owen to eat I remembered “Egg Like Joel’s” and decided to make some for them. It seems to be a keeper in the Kelso house too. It’s really nothing special, just egg and toast all cut up in a bowl. I just like that to this day if you ask one of my siblings what “Egg Like Joel’s” is, they could tell you.
