It’s 10:15 on Tuesday morning. Owen is napping, the bed is made and the rest of the day is waiting for me to jump in. I don’t have a lot of pressing things to do but I have a lot of things I’d like to get done and off my list.
Kris and I are starting on the Atkins diet today. I need to go to the grocery store and get some Atkins friendly foods for the rest of the week. I am out of eggs so I had three meatballs and a teaspoon of A-1 sauce for breakfast. That’s about 2 grams of carbohydrates so I have 13 to 18 left. For lunch I was thinking a piece of chicken with some vegetables of some sort and for dinner…soup I guess. I’ll figure it out before I go to the store. I think this is going to be a tough couple of weeks, but I am a resourceful cook and I know that I can come up with good food if I really try. Kris and I are such Carb adicts it’s going to be a real adjustment for us. The only vegetables that we both really like are corn, carrots and potatoes…bad! We love bread and breading. We love potatoes, mashed, boiled, baked…you name it we like potatoes. And then there’s sugar. I crave sugar. I have been known to go to the pantry and look for something to put in my mouth and upon not finding anything satisfactory, open up the brown sugar bin and grab a couple of those hardened sugar rocks and pop them in my mouth. Yum! Apparently I can’t have black beans either. I love black beans. I can have cream, sour cream, cream cheese and sugar free Jell-o. I’ll have to see if it’s as good as these other Atkins dieters are saying. That’s another thing. Some people are okay with sugar substitutes…not us. We don’t like them, it’s not like we just prefer sugar…we really don’t like them, would rather eat sand thank you very much. So…I’m trying to think of things that will satisfy our perverted taste buds and I’m thinking…this must be what it’s like when someone becomes a Christian and they suddenly realize that all the habits they’ve had in life are sinful. How strange and completely awkward it feels to try to like what you don’t like and not do what you enjoy doing. This will be good for me, I’m quite sure.
Ah…back to my list!
The first day or two are really difficult, but it gets better. On day 3, I think, I drank diet 7-up and it tasted sweeter than regular cola. You might try Stevia as a sugar substitute. It’s an herb that has no harmful side effects like the artificial sweeteners have. You should be able to find it at the health food store. I’ve never tried it so I can’t vouch for how it tastes, but Dr. Mercola swears by it.
You can even find Stevia at Kroger and Publix in the natural foods/organic foods sections. Like Amy, I’ve never tried it, but I have seen it and made mental note.
